Brunch Pizza

Ingredients:

1 large, prepared pizza dough
1/2 cup (125 mL) pizza sauce
2 cups (500 mL) shredded mozzarella cheese, 25% m.f.
6 slices (1/2 pkg) bacon, cooked and crumbled
6-8 cherry or grape tomatoes*, sliced in half
4 large eggs
2 green onions, chopped

Instructions:

Preheat the oven to 450⁰F (230⁰C). Stretch the pizza dough over a pizza pan, then spread the
pizza sauce evenly over the surface. Note: you can also use a prepared pizza crust.

Sprinkle the shredded cheese evenly over the sauce. Add the crumbled bacon and sliced
tomatoes on top of the cheese. Crack four eggs onto the pizza, spaced out evenly over the
surface.

Bake the pizza for 12-15 minutes or until the crust is golden brown, the cheese is melted, and
the eggs are cooked to your liking. Remove from oven to cool, top with green onion and slice
into 8 pieces.

Special Note: Add your favourite toppings to make it your own – mushrooms, spinach, olives,
feta cheese, etc

* 6 cherry tomatoes used in recipe analysis
