Ingredients:
¾ cup (175 mL) butter
2 cups (500 mL) sugar
3 eggs
2 tsp (10 mL) vanilla
1 cup mashed banana
3 cups (750 mL) all-purpose flour
1/2 tsp (2 mL) salt
1 ½ tsp (7 mL) baking soda
1 ½ cups (375 mL) buttermilk
¾ cup (175 mL) finely chopped dates
½ cup (125 mL) mini chocolate chips
½ cup (125 mL) finely chopped pecans
Sliced bananas
Whipped Cream
Instructions:
Preheat oven to 350°F (175 °C). Grease and flour a Bundt pan. In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Add eggs one at a time. Beat well after each addition. Beat in vanilla and mashed banana. In a separate medium-size bowl, sift dry ingredients. Alternate adding the dry ingredient mixture with the buttermilk to the butter mixture; ending with the dry ingredients. Beat well. Stir in dates, chocolate chips and pecans. Pour into prepared pan. Bake for 50 to 60 minutes or until toothpick, when inserted into the cake, comes out clean. Serve cake with sliced bananas and whipped cream.
