Egg, Bacon and Apple Croissant

Ingredients:

1 Granny Smith apple, sliced into ⅛ -inch (3 cm) slices
3 (75 g) Old Cheddar cheese slices, cut in half
6 slices (150 g) of side bacon, cooked
6 – 6 x 3-inch (15 x 7 cm) multigrain croissants
6 eggs

Instructions:

Slice croissants in half. In a medium bowl, whisk eggs, salt and pepper. In a medium non-stick fry pan, over medium-low heat, pour in whisked eggs. Gently move the eggs with a spatula, forming soft curds. Continue stirring until there is no more liquid egg in the pan, but before the eggs appear dry. Layer each croissant with ½ slice of cheese, 2 apple slices, 1 slice of bacon and ⅙ of the eggs.

Makes 6 servings.
