Mandarin Cheesecake

Ingredients:

Crust
2 cups vanilla wafer crumbs
6 Tbsp margarine

Filling
3 bricks (250g) cream cheese
¾ cup sugar
1 cup sour cream
1 cup white chocolate chips
4 eggs

Topping
3 Tbsp sugar
1 cup sour cream
1 tsp orange juice

Garnish and Glaze:
1 can mandarins (well drained)
Syrup from mandarins
1 Tbsp corn starch

Instructions:

Melt margarine. Combine with crumbs and press onto bottom of pan to create the crust.

Beat cream cheese and sugar until smooth in a large bowl. Add sour cream and melted white chocolate chips and beat until well-incorporated. Add eggs one at a time and beat just until combined. Pour filling into pan and bake approximately 50 minutes at 300°F.

Meanwhile, stir together topping. Immediately when finished baking, remove cheesecake and carefully spoon sour cream topping on top. Return to the turned off oven and let sit in warm oven for 1 hour. Refrigerate.

At least 4 hours later, garnish cheesecake with orange slices. Combine drained syrup and cornstarch and bring to a boil. Let cool slightly and spoon over mandarins. Cool and serve.
