Maple Raisin Butter Tarts

Ingredients:

1/3 cup (80 mL) Canadian maple syrup
1/3 cup (80 mL) melted butter
1 cup (250 mL) brown sugar
2 large eggs lightly beaten
1 tsp (5 mL) lemon juice
1 tsp (5 mL) vanilla extract
1/2 cup (125 mL) raisins
24 frozen tart shells (or make your own pastry crust)

Instructions:

Preheat the oven to 375⁰F (190⁰C). Using an electric mixer on medium-low, beat together the maple
syrup, melted butter and brown sugar. Add eggs and mix until combined. Add lemon juice and vanilla,
mix well. Stir in the raisins.

Place the tarts on a cookie sheet, or if using homemade, press pastry into muffin tins. Fill the tarts with
the mixture ¾ full and bake for 15-18 minutes or until golden. Cool on a rack and store in a cool and dry
storage container. These butter tarts will freeze well too.
