Oatmeal Blondies

Ingredients:

1 cup (250 mL) butter, room temperature
1 cup (250 mL) brown sugar
½ cup (125 mL) white sugar
2 eggs
2 tsp (10 mL) vanilla
½ tsp (2 mL) salt
1 tsp (5 mL) baking soda
1 tsp (5 mL) baking powder
1 ½ cups (375 mL) all-purpose flour OR Rice Flour (gluten-free option)
2 cups (500 mL) rolled oats
1 cup (250mL) raisins
1 cup (250 mL) pecans, chopped

Instructions:

Preheat oven to 350°F (175°C). Grease and flour a 9 x 13 inch (22 x 33 cm) baking pan. In a large bowl, beat butter and sugars until light and fluffy.  Beat in eggs one at a time mixing well after each addition. Stir in vanilla, salt, baking soda, baking powder, flour, oats, raisins and pecans until all ingredients are blended. Spread into prepared pan. Bake 20 -25 minutes.
