Ingredients:
2 cups (500 mL) old-fashioned oats
1 tsp (5 mL) baking powder
¼ tsp (1 mL) salt
½ tsp (2 mL) pumpkin pie spice
2 eggs
¼ cup (60 mL) honey
1 Tbsp (15 mL) canola oil
1 tsp (5 mL) vanilla
1/3 cup (80 mL) pumpkin puree
1/3 cup (80 mL) brown sugar
Optional Toppings
½ cup (125 mL) mini chocolate chips
¼ cup (60 mL) dried cranberries
¼ cup (60 mL) sunflower seeds
¼ cup (60 mL) pumpkin seeds
Instructions:
Preheat oven to 350°F (177°C) and grease a 9×9 pan.
Combine oats, baking powder, pumpkin pie spice and salt in medium bowl.
In larger bowl, combine the remaining ingredients. Add the dry ingredients and stir well.
Pour into prepared pan and bake for 32-35 minutes.
Keep at room temperature or freeze individually wrapped portions for up to 2 months.
